Mukimo

Mukimo is a traditional Kenya dish, originally created by the Kikuyu tribe. Essentially, it is a big hunk of vegetables made from mashed potates, beans, maize, and leafy green vegetables. This healthy dish is a popular item in Kenya’s restaurants.
